Soups to Keep You Warm

Winter’s are all about having something warm and comforting, soups define the same cosy feelings that we wish for. It is an amazing mix of rich flavours coming from various kinds of spices and ingredients.

Coming home and having a bowl full of freshly prepared hot soups sitting in a cosy setting is the best you could ever ask for.

Mushroom Soup

Melt some butter with olive oil over medium heat, to this add onion, carrot and a pinch of salt. Stir for about 6-8 minutes until softened, add bay leaf and mushroom. Then add some water and keep stirring all the time to blend well. Simmer it on low heat for next 20 minutes, keep stirring from time to time.

Take out the bay leaf and blend the rest in a blender. Put it back on the stove, add cream and simmer for 4-5 minutes.

For seasoning, you may sauté some mushroom in butter and olive oil over moderate heat. Use salt as per taste, pour the soup in a bowl and add the sautéed mushroom.

Sweet Corn Soup

Take some sweet corn in a pressure cooker with salt in water as per the quantity. Once cooked turn off the gas and wait for the corn to cool down. Grind 3/4th cup sweet corn in 1/4th cup water and on the other hand dissolve 1/2 tablespoon cornflour in 1/4 cup water.

Heat a tsp butter in a pan over medium flame, and add some chopped carrot & spring onions. After cooking for a few minutes, add the corn puree to it. Then add the rest of the corn to the pot and some water & black pepper.

Let it cook for 5 minutes before adding the dissolved corn starch. Keep stirring so that no lumps are formed and how the soup thickens. When cooked, turn off the gas, sweet corn soup is ready to serve.

Spinach and Lemon Soup

Heat some olive oil in a pan over a medium flame, throw some onion, garlic, and a pinch of salt to it. After 5 min add spinach and simmer.

Take some butter in a saucepan and whisk in the flour. Cook it until it turns light golden in colour, then add in the milk & cream. Keep stirring continuously and incorporate the spinach mix to it before bringing it to a boil. Lightly purée in a blender to get a smooth texture. Season to taste with lemon juice, salt, and pepper.

You can serve these soups with some grilled wedges to get the best out of these delicacies.
